Engineering FAQ
Can the FMG series really grind frozen meat blocks directly without thawing? Will it stall the motor or break the blades?
A: Yes. The FMG series is built specifically for frozen product processing. Featuring 5.5 kW to 15 kW high-torque motors, industrial-grade reduction gearboxes, and deep-fluted variable-pitch screw augers, it generates massive feeding and crushing force. Coupled with heat-treated alloy cross blades, as long as the material falls within normal frozen parameters (-18°C to -2°C) and fits into the hopper opening, it shears and extrudes immediately without jamming or overloading the motor.
Why is "minimal temperature rise" critical during high-speed frozen meat grinding? How does it impact product quality?
A: Proteins and fats in meat are sensitive to thermal exposure. Significant friction-induced heat during grinding can melt fat, cause discoloration, and break down protein fibers, leading to rubbery texture loss in meatballs and fat separation/greasiness in sausages. The FMG series features optimized auger flighting and discharge flow paths that ensure short residence times, limiting temperature rise to just 1–2°C and keeping the muscle fiber network and natural binding properties intact.
Can this machine also handle fresh meat, soft bone poultry frames, or vegetables?
A: Absolutely. The unit is fully dual-purpose for both frozen and fresh ingredients. In addition to hard-frozen meat, it efficiently processes chilled fresh meat, poultry carcasses with soft bones (e.g., chicken backs), pork rind, beef fat, and aromatics such as ginger, garlic, and chili peppers, making it an adaptable solution for food manufacturing plants.
What routine maintenance keeps the FMG-100/120/130/160 stable for long production runs?
A: Keep the working area clean, verify the rated power/air supply before each shift, and inspect wear parts per the technical manual. Stable input conditions are the main factor in consistent output and long service life.
Which product sizes and formats can the FMG-100/120/130/160 handle?
A: The machine is configured for its rated specification range (see Technical Specifications). For formats outside the standard range, CECLE can advise on tooling or model selection.
