Engineering FAQ
Should I choose the Electric model or the Gas model for a 12-tray steamer?
A: Make your decision based on your kitchen utility infrastructure: Electric Model : Best for enclosed commercial malls, office basement food courts, and school cafeterias where open flames or gas bottles are restricted, provided your electrical panel supports a 12 kW electrical load (preferably 380V 3-phase). Gas Model : Ideal for street-front restaurants, standalone industrial canteens, or regions where commercial electricity rates are high and high-power connections are difficult to install. Gas heats up quickly and offers lower operating fuel costs.
Can this 12-tray cabinet steam rice and buns/pastries at the same time?
A: Yes. The multi-tier design allows for mixed steaming. Place rice trays (which require more water and longer cooking times) in the lower and middle tiers, and place faster-cooking buns, dumplings, or dim sum in the upper tiers so they can be removed early when finished.
Why does condensation sometimes drip onto cooked rice or buns?
A: This is caused by natural steam condensation inside a sealed saturated environment. To minimize dripping, ensure the door handle is fully locked to create balanced micro-pressure circulation. When steaming delicate pastries, use perforated trays with breathable silicone mats so condensation flows naturally down to the drain channels rather than pooling on food surfaces.
What routine maintenance keeps the RC-6/8/10/12 stable for long production runs?
A: Keep the working area clean, verify the rated power/air supply before each shift, and inspect wear parts per the technical manual. Stable input conditions are the main factor in consistent output and long service life.
Which product sizes and formats can the RC-6/8/10/12 handle?
A: The machine is configured for its rated specification range (see Technical Specifications). For formats outside the standard range, CECLE can advise on tooling or model selection.
