Vacuuming is great, but strong negative pressure can crush strawberries and blueberries or cause fresh red meat to darken. This is where we need Modified Atmosphere Packaging (MAP).

Technical Principle: The machine evacuates air from the tray and refills it with a specific ratio of "protective gas" (usually a mix of nitrogen and carbon dioxide).
